Our Restaurant


Nestled on the rooftop of an elegant tower in an unassuming Dubai neighborhood, Moonrise is a 12-Seater chef's table restaurant. Led by Chef Solemann Haddad, we serve an ever-evolving degustation menu that shines the spotlight on the diversity of ingredients & culinary heritage that the Middle East has to offer.

Essentially an homage to his Dubai upbringing, Solemann’s cuisine draws inspiration from the region, while utilizing his rich knowledge of Japanese techniques and his appreciation for his Franco-Syrian roots.

The dining experience is served on the chef’s table, where you would be seated just inches away from the open kitchen, where Solemann & his team will prepare & guide you through each of your courses. All the while being surrounded by the stunning & unobstructed views of Dubai’s skyline.


Having been the recipient of the 2022 MICHELIN Dubai Young Chef Award, and the 2022 Gault & Millau Future Great of the Year Award, Solemann is Dubai’s youngest Chef Patron at just 28 years of age.

His cuisine primarily focuses on the use of Japanese & Middle Eastern techniques & ingredients to tell his story of growing up in & around Dubai - a cuisine which he’s dubbed as ‘Dubai Cuisine’. In doing so, Solemann also shares the story of countless others in the industry by heavily focusing on supporting & working with many of the UAE’s homegrown artisans, organic growers, mills, & suppliers. His sourcing philosophy is simple: keep things homegrown by showcasing the diversity of ingredients that this region has to offer, & fill in the gaps with the best from around the world.

It's also important to note that Solemann is mostly a self-taught chef, having never undergone significant professional training in other restaurants before opening Moonrise. Despite the obstacles and challenges that came with this path, he feels incredibly grateful for his lack of mentorship because he believes it opened his mind to many unexplored possibilities, freeing him from the constraints of classical training.
