Solemann Haddad is the self taught Chef and Founder behind Moonrise. Moonrise is shaped by the city he was born and raised in - Dubai. Solemann developed his own approach to cooking without formal culinary training or classical mentorship.

Solemann’s Dubai upbringing became the starting point for what he now defines as ‘Dubai Cuisine.’ His vision is derived from Middle Eastern ingredients with a particular influence from Japanese flavours. While rooted in Dubai, his cooking embraces global influences. His culinary style is driven by curiosity and a focus on ingredient sourcing.

Moonrise is built around ingredients from homegrown artisans, mills and growers across the UAE and leading producers from around the world. His work has earned him the 2022 MICHELIN Young Chef Award and Gault&Millau’s Future Great of the Year. The recognition has established Solemann and Moonrise within Dubai’s evolving dining scene.
